Monarch-protecting Dish, famous traditional one in Chaozhou, dated back to more than 700 years ago. It was said that after being defeated, Di Bing, the last Emperor of the Song Dynasty, together with Wen Tianxiang and Lu Xiufu ran away to Chao Yang County, Chao Zhou Prefecture, Guangdong Province. At night, when they take up their lodgings at a temple, a few Buddhist monks, old or young, picked some leaves of sweet potato at the back vegetable garden to do cooking for them. Because they went hungry for long, they ate to their hearts’ content. After enjoying the delicious food, Di Bing conferred the Monarch-protecting Dish on it. From then on, cooks continually better the course and make it become the Yuntui Monarch-protecting Dish famous at home and abroad.
